Step 1: Boil your noodles
Start by bringing a large pot of salted water to a boil. Cook the elbow macaroni until just al dente, according to the package directions. Drain and set aside. You do not want to overcook the pasta here, because you do not want it to get soggy in the sauce.
Step 2: Prep your Veggies
Now let’s prep our surprise ingredient!
Peel and chop your carrots into discs. Then set aside for now. The carrots are light enough in flavor that you wont even notice them! But they make the mac and cheese a nice orangish color. For that authentic Vault cafeteria vibe while providing nutrition to get your hp back up.
Then chop up half of a cauliflower head into chunks. The cauliflower does not add any color but provides creaminess with bonus hp.

Step 5: Make the cheesy sauce!
Over medium-high heat place a sauce pan (I used the pan I made fried spam in)
and add your butter. Once your butter is melted add your flour mixture and stir it into the butter. Keep whisking so it doesn’t clump!
Now, slowly whisk your veggie sauce into the pan until fully combined.
