Instructions
Step 1: Cook the udon noodles
If you’re using frozen udon, drop them in boiling water for 1–2 minutes until they separate. Fresh ones take just about 6 minutes. Drain and set aside — but keep them slightly underdone since they’ll finish cooking in the sauce.
Step 2: Sauté the mushrooms
In a large skillet or wok, melt the butter (or heat olive oil) over medium heat. Add the mushrooms and cook for about 5–6 minutes until they’re browned and fragrant. Don’t rush this part — letting the mushrooms caramelize builds big flavor.
Step 3: Add aromatics and make sauce
Toss in the garlic and sauté until the kitchen smells amazing (about 2 minutes). While your mushrooms are cooking start making the sauce which is oyster sauce, soy sauce, pepper and chicken broth. Mix it all together.
Step 4: Deglaze & flavor
Pour in the sauce we just mixed. Stir to coat all the mushrooms and let it simmer for a couple of minutes — this creates a deeply savory base for the creamy sauce.
Step 5: Add the cream
Reduce the heat to low and stir in the cream. Simmer gently for 2–3 minutes until the sauce thickens slightly.
Step 6: Add the noodles
Toss the udon noodles into the pan and coat them well with the sauce. Let everything simmer together for another minute so the noodles can absorb the creamy, mushroomy goodness.
Step 7: Taste and finish
Season with salt and pepper to taste. Add toppings like chopped scallions, sesame seeds, or chili flakes for a little kick.
