Ingredients
6Slicesof Bacon
2tbspbutter
1Small Onion
3Ribs of Celery
4Small Potatoes
1tbspof Chopped Garlic
2Cans of Clams
3Cupsof Chicken Broth
1Bay leaf
1tspof Oregano
Salt and Pepper to Taste
2tbspwater
1tbspCorn Starch
2cupheavy cream
Green Onion
Instructions
Step 1: Prep your Veggies & Ingredients
Start off by prepping all your ingredients so when we start cooking you can just toss everything into the pot.
Take your ribs of celery and slice them into smaller chunks. Then take your potatoes and quarter them as well. Also, chop your onion into smaller pieces. I also like to get everything measured out so that way I have everything ready.
Step 2: Crisp Your Bacon
In a large pot or Dutch oven, cook the chopped bacon over medium heat until crisp. Remove the bacon and set it aside, leaving a little of the rendered fat in the pot.
Step 3: Cook your celery, onion and garlic
Add your onion, celery and garlic to the pot you cooked your bacon in. Cook until slightly translucent.
Step 4: Add in the broth and potatoes
Once your onion, celery and garlic soften just a bit.
Slowly pour in the clam juice from the can reserving the littles clam for later. Also add in chicken broth, whisking as you go so the mixture stays smooth. Then add your spices and potatoes. Cover and bring it to a boil then reduce heat to medium low to let it simmer. Simmer until your potatoes are soft.
Step 5: Add in the clams!
Now that the potatoes are soft reduce your heat to low. Lets add in the clams and the cream! Stir to combine. Let the chowder warm through for another 5 minutes without boiling
Step 6: Make the cornstarch slurry
Take your water and cornstarch whisk it together. Take this mixture and slowly pour it into your soup to thicken it up slightly.
Wisk it into the soup so it distributes evenly. Let the soup warm up just a bit and then you can serve!
Step 7: Serve and Enjoy!
Ladle the Gulper Slurry clam chowder into bowls and top with crispy bacon and chopped green onion. Serve hot with oyster crackers or crusty bread.
