Saddle Up Salisbury Steak (A Wasteland Victory Dinner)

Saddle Up Salisbury Steak is comfort food with a wasteland swagger: juicy beef patties, a rich onion-mushroom gravy, and enough flavor to make even a grizzled scavver stop complaining. It’s easy, budget-friendly, and perfect for celebrating a marathon watch + a fresh playthrough. Consider it your post-season ration upgrade—the kind that would have settlers lining up with caps in hand.
Step 1: Craft your patties (no workbench required)
In a large bowl, combine the ground beef, breadcrumbs, egg, worchestshire, mustard, ketchups and herbs
Mix gently—don’t overwork it, or your patties get tough like a Deathclaw’s attitude.
Form into 4–6 oval patties (classic Salisbury shape). Press a small dimple into the center of each to help them cook evenly.
Step 2: Sear for that “legendary drop” flavor
Heat oil or butter in a large skillet over medium-high heat. Add patties and sear 3–4 minutes per side, until browned. They don’t need to be fully cooked yet.
Remove patties to a plate. Keep the skillet—those browned bits are loot.
Step 3: Cook onions and mushrooms like you mean it
Reduce heat to medium. Add butter or oil, then onions and mushrooms. Cook 8–10 minutes, stirring occasionally, until softened and browned.
If your onions start sticking, add a splash of broth and scrape the skillet. That’s flavor salvage—wasteland style.
Step 4: Build the gravy (the real main quest)
Slowly pour in 1 1/2 cups of beef broth, stirring constantly so it stays smooth.
Cook for 5 minutes.
Take the other 1/2 cup of beef broth and stir in cornstarch until it is blended.
Slowly pour in the cornstarch slurry and mix well. Add a sprig of Rosemary to the pan.
Simmer 3–5 minutes until thickened.
Step 5: Finish the patties in the gravy
Return patties (and any juices) to the skillet. Spoon gravy over the top. Cover and simmer on low 10–14 minutes, until patties reach 160°F internal temperature. Flipping the patties half way between.
